Calvados originated as “eau de cidre,” made by fermenting apples in the Lower Normandy area.
There are about a hundred varieties of apples grown, but four are those used to make calvados, carefully selected by the Giard family, owners of beautiful low-yielding orchards located in the heart of the Auge region.
The apples, harvested manually in the fall and left outdoors to complete ripening, are ground and pressed to obtain juice, which is destined for a long fermentation in discontinuous copper stills.

Nose: fruity notes accompanied by wood aromas.
Palate: powerful and slightly aggressive. the long barrel aging is also felt in the mouth.
